Sweet Corn Pancakes by Jess and Bill Sabine of The Rose Room


Ingredients

1½ Cup Flour 

2 Tsp Baking Soda 

½ Tsp Salt 

¼ Cup Sugar 

1¼ Cup Milk

1 Egg

¾ Cup Sweet Corn cooked or uncooked, cut from the cob

Instructions

In a medium bowl mix together flour, baking soda, salt and sugar 

In a different bowl whisk together egg and milk

Add wet ingredients to dry and when combined add the sweet corn 

Let mixture rest for a few minutes while you heat a tsp. of butter in a non-stick pan over medium heat (non-stick spray will work in place of butter) 

Use a ¼ cup scoop and work in batches making your pancakes,
browning them on each side

Top with butter and your favorite local maple syrup and enjoy
